Scale
Meats:
- 300 grams (10.5 ounces) ground beef
- 300 grams (10.5 ounces) ground chicken
- 250 grams (9 ounces) thinly sliced turkey or chicken breast (alternative to bacon)
Seasonings and Spices:
- 1 teaspoon salt
- 1 tablespoon dried dill
- 1 teaspoon dried garlic
- 1 tablespoon meat seasoning
- Pepper mix, to taste
- 20 grams (about 2 tablespoons) dried dill
- 1/2 teaspoon salt
- Black pepper, to taste
Other Ingredients:
- 2 eggs
- 2 medium potatoes (about 400 grams / 14 ounces), peeled and grated
- 300 grams (10.5 ounces) cottage cheese
- 3–4 cloves garlic, minced
- 2 teaspoons (about 10 grams) flour
Instructions
- Prepare the meat mixture by combining ground beef and ground chicken in a large bowl. Incorporate salt, pepper mix, dried dill, dried garlic, and meat seasoning. Crack eggs into the mixture and blend thoroughly until ingredients are evenly distributed.
- Create the filling by mixing grated potatoes, cottage cheese, minced garlic, and dried dill in a separate bowl. Fold in flour until well integrated. Season with salt and black pepper to achieve desired taste.
- Arrange turkey or chicken breast slices on plastic wrap, slightly overlapping to form a continuous surface. Spread the meat mixture evenly across the layer. Position the potato and cottage cheese filling centrally, forming a compact log shape.
- Utilize the plastic wrap to carefully roll the meat around the filling, creating a compact cylinder. Ensure tight wrapping and refrigerate for 30 minutes to set the structure.
- Heat oven to 200C (400F). Transfer the roll to a parchment-lined baking tray. Roast for 35-40 minutes until achieving a golden-brown exterior. Optional: Brush with olive oil for enhanced crispiness, particularly when using poultry slices.
- Allow the roll to rest briefly after cooking. Slice into round portions and serve immediately. Optionally garnish with fresh herbs for added visual appeal and flavor complexity.
Notes
- Meat Blending Tip: Mix ground beef and chicken thoroughly to ensure even flavor distribution and prevent dry spots in the roll.
- Filling Consistency Hack: Drain excess moisture from grated potatoes to prevent a soggy filling that could make the roll fall apart.
- Protein Flexibility: Swap turkey or chicken slices with thin beef or pork cuts for different flavor profiles and dietary preferences.
- Low-Carb Adaptation: Replace potato filling with cauliflower rice or finely chopped vegetables to reduce carbohydrate content and add nutritional variety.
