Description

Roasted garlic soup promises comfort in a classic French bowl, blending rich, caramelized flavors with creamy textures. Herb-infused and warming, you’ll savor each spoonful of this simple yet sophisticated culinary experience.

Ingredients

Scale

Vegetables:

  • 1 large cauliflower head, cut in florets
  • 1 medium yellow onion, diced
  • 1 whole garlic head
  • Green onions (for garnish)

Liquid and Dairy:

  • 4 cups (960 milliliters) vegetable broth
  • 3 tablespoons (45 milliliters) olive oil, divided
  • 1 cup (240 grams) sharp cheddar cheese, shredded
  • Extra cheddar (for garnish)

Seasonings and Garnishes:

  • 1/2 teaspoon salt, plus more to taste
  • Black pepper to taste
  • Croutons or toasted bread (for garnish)

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with parchment paper. Drizzle cauliflower with olive oil and wrap whole garlic head in aluminum foil, lightly coating with oil.
  2. Roast vegetables for 30-35 minutes, turning cauliflower midway to ensure even browning. Remove from oven and allow garlic to cool completely before handling.
  3. In a large pot, warm olive oil over medium heat. Sauté diced onions until translucent and softened, approximately 5-7 minutes.
  4. Transfer roasted cauliflower to blender. Unwrap garlic and squeeze roasted cloves directly into blender. Pour in vegetable broth and blend until completely smooth and creamy.
  5. Pour blended soup back into pot. Stir in grated cheese and simmer gently for 10-12 minutes, allowing flavors to meld together. Taste and adjust seasoning if needed.
  6. Ladle soup into serving bowls. Garnish with fresh herbs, additional cheese, or cracked black pepper before serving hot.

Notes

  • Roast garlic whole with skin on to prevent burning and create a deeper, sweeter flavor profile.
  • Use vegetable broth for a vegetarian version or bone broth for added protein and richness.
  • Swap heavy cream or cheese with coconut milk for a dairy-free alternative that maintains creamy texture.
  • Control soup consistency by gradually adding broth during blending to achieve desired thickness.
