Ingredients
Scale
Vegetables:
- 1 large cauliflower head, cut in florets
- 1 medium yellow onion, diced
- 1 whole garlic head
- Green onions (for garnish)
Liquid and Dairy:
- 4 cups (960 milliliters) vegetable broth
- 3 tablespoons (45 milliliters) olive oil, divided
- 1 cup (240 grams) sharp cheddar cheese, shredded
- Extra cheddar (for garnish)
Seasonings and Garnishes:
- 1/2 teaspoon salt, plus more to taste
- Black pepper to taste
- Croutons or toasted bread (for garnish)
Instructions
- Preheat the oven to 400°F and prepare a baking sheet with parchment paper. Drizzle cauliflower with olive oil and wrap whole garlic head in aluminum foil, lightly coating with oil.
- Roast vegetables for 30-35 minutes, turning cauliflower midway to ensure even browning. Remove from oven and allow garlic to cool completely before handling.
- In a large pot, warm olive oil over medium heat. Sauté diced onions until translucent and softened, approximately 5-7 minutes.
- Transfer roasted cauliflower to blender. Unwrap garlic and squeeze roasted cloves directly into blender. Pour in vegetable broth and blend until completely smooth and creamy.
- Pour blended soup back into pot. Stir in grated cheese and simmer gently for 10-12 minutes, allowing flavors to meld together. Taste and adjust seasoning if needed.
- Ladle soup into serving bowls. Garnish with fresh herbs, additional cheese, or cracked black pepper before serving hot.
Notes
- Roast garlic whole with skin on to prevent burning and create a deeper, sweeter flavor profile.
- Use vegetable broth for a vegetarian version or bone broth for added protein and richness.
- Swap heavy cream or cheese with coconut milk for a dairy-free alternative that maintains creamy texture.
- Control soup consistency by gradually adding broth during blending to achieve desired thickness.
