Beef:

  • 1 pound beef steak or top round, thinly sliced
  • 2 tablespoons olive oil
  • 1 medium green bell pepper, thinly sliced

Soup Base:

  • 6 cups beef broth
  • 1 cup heavy cream
  • 8 ounces white cheddar cheese, shredded
  • 8 ounces provolone cheese, shredded
  • 1 medium onion, chopped
  • 1 medium carrot, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon hot sauce
  • 1/3 cup all-purpose flour
  • 1 cube beef bouillon (optional)
  • 2 tablespoons fresh parsley, chopped

Croutons:

  • 1/2 baguette, cut into 1-inch cubes
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. In a Dutch oven, sear bell peppers in olive oil over medium-high heat for 2 minutes. Brown beef thoroughly, then transfer both to a separate plate.
  2. Using the same pot, sauté onions, carrots, and celery until onions turn translucent. Add minced garlic and cook briefly. Dust with flour, incorporate Worcestershire and hot sauce, then season with salt and pepper.
  3. Pour beef broth into the vegetable mixture, bringing to a rolling boil. Reduce heat and allow soup to simmer for 15 minutes until vegetables become tender. Puree the mixture completely using an immersion blender.
  4. Incorporate heavy cream and selected cheeses, allowing to simmer for 5 minutes. Fold in half of the reserved beef mixture, then remove from heat.
  5. Prepare crispy croutons by tossing bread cubes with oil, salt, and pepper. Roast at 400°F for 7-10 minutes until achieving a golden, crunchy texture.
  6. Distribute soup into serving bowls. Garnish with remaining beef mixture and freshly baked croutons before serving.
