Description
My mom’s hearty old fashioned vegetable beef soup warms hearts with rich, comforting flavors passed down through generations. Hearty ingredients blend perfectly, creating a nostalgic meal that connects family memories and traditional cooking techniques.
Ingredients
Scale
Meat:
- 1 pot roast (2 pounds / 907 grams)
Fresh Vegetables:
- 2 russet potatoes, chopped
- 4 large carrots, chopped
Frozen Vegetables:
- 1 bag frozen seasoning blend (or chopped onions)
- 1 bag frozen peas
- 1 bag frozen green beans
- 1 bag frozen corn
Liquid and Seasonings:
- 1 (32 ounces / 946 milliliters) container beef broth
- 2 (10.75 ounces / 305 grams) cans tomato soup
- 1 can filled with water
- Salt, to taste
- Pepper, to taste
Instructions
- Prepare the roast by generously seasoning with salt and pepper, then place in a slow cooker with a portion of beef broth. Allow to cook on LOW temperature for approximately 10 hours until meat becomes easily shreddable using two forks.
- Heat a large pot with oil and sauté carrots along with seasoning mix until vegetables become tender and slightly caramelized.
- Incorporate shredded beef, diced potatoes, remaining vegetables, additional beef broth, tomato soup, water, and additional salt and pepper into the pot.
- Elevate heat to create a rolling boil, then immediately reduce to a gentle simmer. Cover the pot and let the soup develop flavors for roughly 60 minutes, stirring occasionally to prevent sticking.
- Monitor liquid levels throughout cooking process, gradually adding water as needed to maintain desired soup consistency and prevent excessive reduction.
Notes
- Slow Cooker Magic Transforming a tough roast into tender, shreddable meat requires patience and low, steady heat, ensuring maximum flavor infusion.
- Vegetable Versatility Feel free to swap or add seasonal vegetables like celery, parsnips, or green beans to customize the soup’s nutritional profile.
- Broth Boost For a richer taste, replace water with additional beef broth or substitute with bone broth to enhance depth and nutritional value.
- Freezer-Friendly Preparation This hearty soup stores beautifully in airtight containers, lasting up to 3 months in the freezer for quick future meals.
