Description

Hearty hamburger potato soup delivers comfort in a bowl with rich, creamy flavors. Ground beef and tender potatoes create a satisfying meal you can savor on chilly evenings.

Ingredients

Scale

Base:

  • 1 pound ground beef
  • 1 small sweet onion, diced
  • 2 cloves garlic, minced

Soup Ingredients:

  • 4 cups (32 fluid ounces) low sodium chicken broth
  • 3 medium russet potatoes, peeled and medium diced
  • 12 ounces (340 grams) frozen peas and carrots (optional)
  • 10.5 ounces (298 grams) can cheddar cheese soup
  • 1/2 teaspoon black pepper

Finishing Ingredients:

  • 1 cup (240 milliliters) heavy cream
  • 8 ounces (227 grams) Velveeta, cut into cubes (optional)

Instructions

  1. In a skillet over medium-high heat, sauté ground beef and onions until meat is thoroughly cooked and onions become translucent, approximately 8-10 minutes. Eliminate excess fat.
  2. Introduce minced garlic to the beef mixture, stirring for 30 seconds to release aromatic flavors. Omit this step if using pre-prepared garlic.
  3. Transfer the seasoned beef blend into the slow cooker, incorporating chicken broth, diced potatoes, mixed vegetables, condensed cheddar soup, and ground black pepper.
  4. Secure the slow cooker lid and allow contents to simmer on low temperature for 7-8 hours, or alternatively on high setting for 3-4 hours until potatoes reach tender consistency.
  5. During the final hour of cooking, pour heavy cream and cubed Velveeta cheese into the soup. Replace lid and continue cooking until cheese completely dissolves, then gently integrate all ingredients.

Notes

  • Make this soup more diet-friendly by substituting ground turkey for beef to reduce fat content and calories.
  • Enhance nutrition by adding extra vegetables like diced carrots or spinach for increased vitamins and fiber.
  • Create a gluten-free version by using cornstarch instead of flour and selecting gluten-free broth and cheddar soup.
  • Keep sodium levels in check by choosing low-sodium broth and reducing added salt, perfect for heart-conscious individuals.
