Ingredients

Scale

Crust Ingredients:

  • 2 cups graham cracker crumbs
  • 2 tablespoons (30 milliliters) sugar
  • 6 tablespoons (90 milliliters) melted unsalted butter

Filling Ingredients:

  • 4 (8-ounce/226 grams) packages cream cheese, softened
  • 1 cup (200 grams) sugar
  • 1/3 cup (40 grams) powdered sugar
  • 1/2 cup (120 milliliters) heavy cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons (30 milliliters) sugar cookie flavoring (optional)

Decoration and Coloring Ingredients:

  • 4 tablespoons (60 milliliters) unsalted butter
  • 4 ounces (113 grams) cream cheese
  • 4 cups (480 grams) powdered sugar
  • Purple food coloring gel
  • Orange food coloring gel
  • Lime green food coloring gel
  • Black food coloring gel
  • Black sugar sprinkles

Instructions

  1. Prepare the base by lining a 7-inch springform pan with parchment paper. Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press the mixture firmly into the pan’s bottom, creating an even layer. Place in the freezer to set.
  1. Using a stand mixer, whip cream cheese, heavy cream, sugar, and powdered sugar on low speed until achieving a silky consistency. Incorporate vanilla and sugar cookie flavoring, mixing until perfectly smooth and creamy.
  1. Separate the cheesecake batter into four distinct bowls. Introduce food coloring – purple, orange, green, and black – blending each thoroughly until colors are uniform and vibrant.
  1. Carefully pour the purple layer into the prepared pan, spreading evenly. Refrigerate for approximately 2 hours or until completely firm. Store remaining colored layers in the refrigerator.
  1. Once the purple layer has set, gently add the green layer. Freeze until solid, then repeat the process with the orange layer. Conclude with the black layer, sprinkling black sugar sprinkles on top. Freeze overnight for optimal texture.
  1. Create decorative frosting by whipping butter and cream cheese until light and fluffy. Gradually integrate powdered sugar until achieving a smooth consistency. Divide into three portions, tinting each with purple, green, and orange food coloring.
  1. Arrange colored frostings in parallel strips on plastic wrap. Roll lengthwise, trim one end, and transfer to a pastry bag fitted with a star tip. Delicately pipe decorative borders around the cheesecake’s edges. Return to freezer until serving time.
  1. When ready to serve, carefully release from springform pan and slice into elegant 2-inch portions. Serve chilled for maximum flavor and presentation.
