Instructions
- Sear ground beef and Italian sausage in a large pot over medium-high heat until browned. Drain excess fat and set meat aside.
- In the same pot, sauté chopped onions for 5 minutes until translucent. Add minced garlic and cook for an additional 1-2 minutes.
- Stir in tomato paste, marinara sauce, Italian herbs, and chicken broth. Reintroduce the cooked meat to the pot and bring the mixture to a rolling boil.
- Break lasagna noodles into smaller pieces and add them to the bubbling soup. Reduce heat and simmer for 8-10 minutes until noodles become tender.
- Optional: Incorporate fresh spinach leaves during the last 2 minutes of cooking, allowing them to wilt into the soup.
- Combine ricotta, shredded mozzarella, and grated parmesan cheese in a separate mixing bowl.
- Ladle the hot soup into serving bowls, generously topping each portion with the prepared cheese mixture.
