Description

Paula Deen’s lasagna soup combines hearty Italian flavors in a comforting one-pot meal. Cheese-topped and richly seasoned, this soup delivers classic lasagna taste without complex preparation. Diners will savor each spoonful of warmth and depth.

Ingredients

Scale

Meat:

  • 0.5 pound lean ground beef
  • 0.5 pound ground Italian sausage

Sauce and Broth:

  • 24 ounces (680 grams) marinara sauce
  • 7 cups (1.66 liters) low sodium chicken broth
  • 2 tablespoons tomato paste

Seasonings and Aromatics:

  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 0.25 teaspoon red pepper flakes
  • 0.5 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 tablespoons fresh parsley
  • Salt and pepper to taste

Pasta and Cheese:

  • 9 lasagna noodles, broken
  • 2 cups (56 grams) fresh spinach (optional)
  • 10 ounces (283 grams) ricotta cheese
  • 1 cup (113 grams) shredded mozzarella cheese
  • 0.5 cup (50 grams) grated parmesan cheese
  • Fresh basil for serving

Instructions

  1. Sear ground beef and Italian sausage in a large pot over medium-high heat until browned. Drain excess fat and set meat aside.
  2. In the same pot, sauté chopped onions for 5 minutes until translucent. Add minced garlic and cook for an additional 1-2 minutes.
  3. Stir in tomato paste, marinara sauce, Italian herbs, and chicken broth. Reintroduce the cooked meat to the pot and bring the mixture to a rolling boil.
  4. Break lasagna noodles into smaller pieces and add them to the bubbling soup. Reduce heat and simmer for 8-10 minutes until noodles become tender.
  5. Optional: Incorporate fresh spinach leaves during the last 2 minutes of cooking, allowing them to wilt into the soup.
  6. Combine ricotta, shredded mozzarella, and grated parmesan cheese in a separate mixing bowl.
  7. Ladle the hot soup into serving bowls, generously topping each portion with the prepared cheese mixture.
  8. Garnish with fresh basil leaves and serve immediately while piping hot.

Notes

  • Choose lean ground beef and turkey sausage for a healthier version of this comforting soup.
  • Break lasagna noodles into smaller pieces to ensure even cooking and easier eating experience.
  • Customize the soup’s thickness by adjusting broth quantity – add more for a lighter soup or less for a heartier texture.
  • Store leftover cheese mixture separately to prevent soggy topping and maintain fresh, creamy consistency when reheating.
