- Carefully pour the tempered egg mixture back into the rice pot. Continue cooking on low heat, stirring constantly, until the pudding thickens and reaches approximately 160°F (71°C). Avoid boiling to maintain smooth consistency.
- Remove from heat and fold in vanilla extract, raisins, and ground cinnamon. The pudding will continue to thicken as it cools.
- Transfer to serving dishes and let cool for 15-20 minutes. Serve warm or chilled, optionally garnishing with an extra sprinkle of cinnamon or a dollop of whipped cream.
