Instructions

  1. In a heavy-bottomed saucepan, combine milk, rice, and salt. Bring to a gentle boil over medium heat, then reduce to a low simmer. Cover partially and cook for 20-25 minutes, stirring periodically to prevent sticking and ensure even cooking.
  2. While rice simmers, create a tempering mixture by whisking egg and brown sugar in a separate bowl. Slowly incorporate small amounts of hot rice liquid into the egg mixture, one tablespoon at a time, continuously whisking to prevent curdling.
  3. Carefully pour the tempered egg mixture back into the rice pot. Continue cooking on low heat, stirring constantly, until the pudding thickens and reaches approximately 160°F (71°C). Avoid boiling to maintain smooth consistency.
  4. Remove from heat and fold in vanilla extract, raisins, and ground cinnamon. The pudding will continue to thicken as it cools.
  5. Transfer to serving dishes and let cool for 15-20 minutes. Serve warm or chilled, optionally garnishing with an extra sprinkle of cinnamon or a dollop of whipped cream.
