Instructions
- Heat oil in a large skillet and thoroughly brown chicken pieces, ensuring each side develops a golden crust. Transfer browned chicken to a slow cooker.
- In a mixing bowl, whisk together soups, broth, diced onions, sliced mushrooms, garlic salt, and black pepper. Pour the mixture evenly over the chicken in the slow cooker.
- Cover and set slow cooker to low temperature, allowing the chicken to simmer and tenderize for 4-5 hours. The meat should become fork-tender and easily pull apart.
- During the last 30 minutes of cooking, prepare fettuccine according to package instructions. Drain pasta and set aside, keeping warm.
- Once chicken is fully cooked, carefully remove pieces from the slow cooker and set aside. Reduce slow cooker to off setting and incorporate cream cheese, stirring until completely melted and sauce becomes smooth and creamy.
- Arrange cooked fettuccine on serving plates, top with tender chicken pieces, and generously ladle the rich, creamy sauce over the pasta. Optionally, sprinkle freshly grated Parmesan cheese on top for additional flavor.
