Description

Rich buffalo chicken soup brings zesty comfort to classic comfort food lovers. Spicy broth and tender chicken create a hearty meal that satisfies with bold flavors you’ll crave again and again.

Ingredients

Scale

Main Protein:

  • 1.5 pounds chicken breasts
  • 8 ounces cream cheese

Vegetables and Aromatics:

  • 1/2 medium onion, chopped
  • 2 sticks celery, chopped small
  • 2 medium carrots, peeled & chopped

Liquid, Seasoning, and Cooking Ingredients:

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 (1 ounce) packet ranch seasoning
  • 4 cups chicken broth
  • 1/4 cup Frank’s Red Hot Sauce
  • Salt & pepper to taste
  • Optional: blue cheese and scallions

Instructions

  1. In a large pot, melt oil and butter over medium heat. Sauté onions, celery, and carrots for 6-7 minutes until vegetables become tender and slightly translucent.
  2. Sprinkle flour and ranch seasoning into the vegetable mixture, stirring continuously to prevent clumping. Gradually pour in chicken broth and hot sauce, whisking until smooth.
  3. Gently place whole chicken breasts into the simmering liquid. Increase heat to bring mixture to a boil, then reduce to low heat. Cover and cook for 10-12 minutes until chicken is fully cooked.
  4. Remove chicken from pot and slice into bite-sized pieces. Add cream cheese to the soup, stirring until completely melted and incorporated.
  5. Return chopped chicken to the pot. Season with salt and pepper to taste, ensuring even distribution of flavors.
  6. Ladle soup into serving bowls. Optional: Garnish with crumbled blue cheese and chopped scallions for added texture and flavor complexity.

Notes

  • Swap ranch seasoning for homemade blend to control sodium and customize flavors more effectively.
  • Choose boneless, skinless chicken breasts for faster cooking and easier shredding.
  • Use low-fat cream cheese to reduce overall calorie content while maintaining creamy texture.
  • Opt for gluten-free flour or cornstarch if needing a celiac-friendly version of the soup.
